Confinement leans heavily on meat and soup, so vegetables that are interesting in their own right earn their place. Lotus root, crisp and mildly sweet, is a favourite of the tradition, and a quick stir-fry with ginger is one of the easiest ways to serve it.

Method

  1. 1 Peel the lotus root and slice it thinly. Drop the slices into water with a splash of vinegar as you go, to keep them pale and crisp.
  2. 2 Drain the lotus root well. Heat the oil in a wok over medium-high heat and fry the ginger and garlic for a minute until fragrant.
  3. 3 Add the lotus root and stir-fry for 3 to 4 minutes, adding a splash of water to help it cook through.
  4. 4 Stir in the oyster sauce, toss for another minute until crisp-tender, then add the goji berries and serve warm.

Notes and substitutions

  • The vinegar soak is worth doing: it stops the cut surfaces browning and keeps the slices pale and crunchy.
  • For a heartier dish, add a few soaked black fungus pieces or a handful of snow peas.
  • Keep it crisp-tender rather than soft; lotus root is at its best with a little bite.
